raw energy balls (the AC/DC of raw, vegan snacks)

My new favorite food, from Alicia Silverstone’s cookbook The Kind Diet (Alicia Silverstone is THE SHIT, btw, and I’ve been eating a ton out of this book recently and loving it)

1/2c walnuts
1/2c pitted dates [I used an unknown amount because I was unwilling to measure]
1/2c raw carob powder [I used maybe half this]
1/2c maple syrup [I used half this at most]
1/2c almond butter
1/2tsp vanilla [skipped]
1/4tsp fine sea salt
1/2c almonds
2c shredded coconut [I used maybe 1c]

Interestingly, I had a bunch of cashews in mine and for some reason thought they were a part of the recipe. The moral of the story is, do what you want.

Her instructions tell you to food process the walnuts first, then the dates, then almost everything else, then the almonds last. I put basically everything in together and let the food processor run for like forever. That worked too. She says form into balls and keep them in the freezer, might I add “place them on wax paper”?

I keep them in the freezer and eat them basically all the time. Mine got a little sticky when melted (hahaha maybe it’s because I didn’t follow the ingredients??) but I’ve still taken them places and eaten them sticky-style.
